Add the mint leaves, lime wedges and sugar to a cocktail shaker. Gently muddle. Pour in the rum and coconut cream. Fill the shaker with ice, shake to combine and chill. Strain into an ice filled glass. Top with sparkling water. Garnish with lime and mint. Enjoy!

2.5 ounces Stealth West Coast Rum
2 ounces (1/4 cup) coconut cream (can sub coconut water)
Top off with sparkling water
